Shake-N-Bake Fish

You need:
1lb Fish Fillets, skin attached (I used Arctic Char)
2 packs Shake-n-Bake Extra Crispy
2 eggs, whisked
3 tbsp Original Soy Milk
1 tsp mustard
seasonings of your choice (I used parsley, chives, and pepper)


To Make:
1. Preheat oven to 350C. Lightly spray 9x13 glass baking dish with oil spray.
2. Cut fish into desired portions. Pat dry.
3. Mix seasonings with Shake-n-Bake, in a medium bowl. In a separate small bowl, mix mustard and milk into whisked eggs.
4. Dip fish portions into egg mixture, and coat in Shake-n-Bake mixture. Place in baking dish, skin down.
5. Bake 30 mins, or until fish is flaky. 


I served this with Homemade Baked taters (Potatoes washed, cut into tater shape, tossed in Olive Oil, Club House Vegetable Seasoning, salt and pepper; baked for about 40 mins), and green peas.

Quick Chicken Noodle Soup

Seems like a long time since I posted here. And I've come to realize all my entries are sweets and treats. Time to include some meals. This was the fastest soup I have ever made. I usually like to take my time with soup, and allow it to simmer to blend the flavors. I was crunched for time, and wanted something decent for supper. My daughter absolutely loves soup, any kind of soup! 




You need:
1 onion, diced
2 packs Oxo or Knorr chicken bouillon
2 carrots, thinly sliced
1 cup frozen peas
1 squirt of mustard
Janes Meal Makers Oven Roasted Carved Chicken Breasts (about half a bag)
about 4-6 cups of water
1 cup egg noodles


To make:
Bring water to a boil, add onion. Add Oxo/Knorr. Boil for about 10 mins. Add carrots, and cook on medium heat until just tender. Add chicken, peas, and mustard. Continue cooking for about 30-35 mins. Add noodles and simmer for 10 mins. Voila! 

** This made a small pot of soup for my 2 kiddos and I. We had enough for leftovers for lunch the next day as well.

Chocolate Crinkles


You need:
1 3/4 cups granulated sugar
1 cup unsweetened cocoa powder
1 cup unsweetened applesauce
1/2 cup canola oil
2 tsp vanilla
2 1/4 cups all purpose flour
2 tsp baking powder
1/4 tsp salt
1 cup icing sugar


To Make:

  1. Using an electric mixer, combine granulated sugar, cocoa powder, applesauce, oil and vanilla until well blended.
  2. In another bowl, whisk flour with baking powder and salt.
  3. Add flour mixture to cocoa mixture in 3 parts, mixing each addition well with an electric mixer for a soft, wet batter. Cover the bowl with plastic wrap and place in fridge for 2 hours. It must be well chilled to roll, so don’t skip this step!
  4. Preheat oven to 350F. Line 2 baking sheets with parchment paper.
  5. Sift icing sugar into a shallow bowl. Scoop spoonfuls of dough and roll between your hands to make 11⁄2-in. balls. Roll them in icing sugar until well coated. The more sugar on the outside, the better the effect. Place on the baking sheets about 2 in. apart. Bake for 10 min — but check at 8. They should be puffed and just set, so they’ll have a soft, brownie-like texture. Cool completely on a rack. Repeat with remaining dough. Store in an airtight container for up to 2 days.

Oatmeal Raisin Cookies


You need:
1 1/2 cups oatmeal
1/2 cup whole wheat flour*
1/2 cup all purpose flour*
2 tbsp flax meal*
1 cup brown sugar
1/2 cup soft dairy free margarine/butter
1 egg
1 tsp vanilla
1/2 tsp baking powder
1/2 tsp baking soda
pinch of salt
1 cup raisins

To make:
  1. Combine dry ingrediets: flour, oatmeal, salt, flax meal, baking powder and baking soda.
  2. Beat together the butter, sugar, and egg.
  3. Beat in Vanilla.
  4. Mix in dry ingredients.
  5. Gently blend in raisins.
  6. Roll into balls, and place on a non-stick cookie sheet or a lined pan with parchment paper leaving spaces in between.
  7. Bake at 375*F for 12-20 mins depending on the size and thickness of the cookies, until they are lightly browned but still soft. 
  8. Remove from the oven; let cool on the baking sheet - they will continue to cook for a few minutes.
  9. Remove with a spatula, and place on a cooling rack until completely cooled. 

* Original recipe calls for 1 cup all purpose flour rather then 1/2 and 1/2. Also Flax Meal was an addition by me.

Whole Grain/Wheat Bread


You need:
6 cups lukewarm water
1 1/3 cups white sugar
1/4 cup active dry yeast
1 tbsp salt
3/4 cup extra virgin olive oil
1/4 cup oat bran
1/4 flax meal
1/4 cup wheat germ
10 cups whole wheat flour
8 cups white flour

To make:
  1. In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.
  2. Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.
  3. Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.
  4. Bake at 350 degrees F (175 degrees C) for 30 minutes.


With this recipe, I yielded 6 loaves of bread, 4 burger buns, and 6 bread buns.

Banana Bread

You need:
4 ripe bananas, smashed
1/3 cup applesauce*
2 tbsp vegetable oil*
3/4 cup brown sugar*
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 cup of all-purpose flour*
1/2 cup whole wheat flour
1 tbsp oat bran (optional)
1 tbsp flax meal (optional)
1 tbsp wheat germ (optional)
1/2 cup chopped walnuts

To make:
  1. Preheat the oven to 350°F (175°C). 
  2. With a wooden spoon, mix applesauce and oil into the mashed bananas in a large mixing bowl. 
  3. Mix in the sugar, egg, flax, oat bran wheat germ and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. 
  4. Add the flour, mix. Mix in walnuts until just mixed. Pour mixture into a oiled 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
*Original recipe called for 1/3 cup butter instead of oil and applesauce combined, and 1 1/2 cups white flour rather then 1 cup white and 1/2 cup whole wheat. I also added the extras, oat bran, flax, wheat germ and walnuts. Also called for 1 cup white sugar, but that would have been too sweet, and I rather use brown sugar.


NOTE: If you decide not to use the optional ingredients you will need to adjust your applesauce amount to 1/4 rather then 1/3! 




French Toast Casserole

Almost forgot to get a picture! 
You need:
6 eggs
1 cup original Soy Milk
1 tsp vanilla
1 tbsp cinnamon
1 tbsp sugar
1 tbsp wheat germ (optional)
1 tbsp nutritional yeast flakes (optional)
5 slices homemade bread


To make:

  1. In small bowl, whisk together eggs, milk, and vanilla.
  2. Grease dish with spray oil, such as Pam.
  3. Pour enough egg mixture on bottom of dish to cover the bottom.
  4. Arrange bread in dish, overlapping.
  5. Sprinkle with cinnamon, sugar, wheat germ and yeast flakes.
  6. Pour remaining mixture over bread.
  7. Bake at 350 degrees for 40-50 mins or until done, and browned. 
My son loves french toast, he loved this, even when I told him it was made with soy milk! This was my first time making something like this, next time I have a few ideas of how to change it up....stay tuned : D.
